Ingredients
  

For the Chicken Wings:
  • 340 g chicken wings (enough for 4 people)
  • 1 tsp salt
  • 4 cloves garlic (peeled and smashed)
For the Vegetables (Blanched):
  • 1–2 medium potatoes (sliced)
  • 1 small lotus root (peeled and sliced)
  • 4–5 Shiitake mushrooms (sliced)
  • 1 King oyster mushroom (sliced)
  • 1 small bunch enoki mushrooms (roots removed)
  • 1 cup broccoli florets
  • 1 cup Chinese cabbage (roughly chopped)
  • Tofu (cubed, firm or fried – optional)
For the Mala Sauce:
  • 2–3 tbsp Mala paste (adjust to taste)
  • 3–4 cloves garlic (peeled and smashed)
  • 2–3 tsp seasoning powder (e.g., mushroom or chicken stock powder)
  • Salt (to taste)
  • Dried chilies (for extra heat – optional)
  • Fresh coriander and roasted sesame seeds for garnish (optional)

Equipment

  • Large pot (for boiling chicken wings)
  • Medium pot or saucepan (for blanching vegetables)
  • Strainer or slotted spoon
  • Large mixing bowl
  • Frying pan or wok (for Mala sauce)
  • Knife & chopping board
  • Small bowls (for serving)
  • Chopsticks (for serving)

Instructions
 

  1. Boil the Chicken Wings
    In a large pot, bring water to a boil.
    Add chicken wings, salt, and smashed garlic.
    Boil for about 15 minutes, or until fully cooked and tender.
  2. Prepare and Blanch the Vegetables
    While the wings are boiling, prepare all vegetables:
    Remove roots from enoki mushrooms.
    Slice mushrooms and root vegetables into proper pieces.
    In boiling water, blanch vegetables in batches:
    – Potatoes & lotus root: 2–3 minutes
    – Shiitake & king mushrooms: 2–3 minutes
    – Enoki mushrooms: just dip briefly (they cook instantly)
    – Broccoli: 1 minute
    – Chinese cabbage: 30 seconds
    Transfer each batch into a large mixing bowl.
  3. Cook the Mala Sauce
    Heat a pan or wok with a bit of oil.
    Fry smashed garlic until fragrant.
    Add Mala paste and stir-fry for about 1–2 minutes.
    Add boiled chicken wings.
    Add seasoning powder and salt to taste.
    (Optional) Add dried chilies for more heat.
  4. Mix Everything Together
    Pour the Mala-coated chicken wings into the bowl with blanched vegetables.
    Thoroughly mix all the ingredients.
    (Optional) Garnish with chopped coriander and roasted sesame seeds.
