- Boil the Chicken WingsIn a large pot, bring water to a boil.Add chicken wings, salt, and smashed garlic.Boil for about 15 minutes, or until fully cooked and tender.
- Prepare and Blanch the VegetablesWhile the wings are boiling, prepare all vegetables: - Remove roots from enoki mushrooms. - Slice mushrooms and root vegetables into proper pieces.In boiling water, blanch vegetables in batches: - Potatoes & lotus root: 2–3 minutes - Shiitake & king mushrooms: 2–3 minutes - Enoki mushrooms: just dip briefly (they cook instantly) - Broccoli: 1 minute - Chinese cabbage: 30 secondsTransfer each batch into a large mixing bowl.
- Cook the Mala SauceHeat a pan or wok with a bit of oil.Fry smashed garlic until fragrant.Add Mala paste and stir-fry for about 1–2 minutes.Add boiled chicken wings.Add seasoning powder and salt to taste.(Optional) Add dried chilies for more heat.
- Mix Everything TogetherPour the Mala-coated chicken wings into the bowl with blanched vegetables.Thoroughly mix all the ingredients.(Optional) Garnish with chopped coriander and roasted sesame seeds.
